How do you fit Croagh Patrick and the Octagon on the one plate? Oh, and throw in a swan pedaloe from Westport House for good measure.
Chef Danny Coleman, winner of the competition to design a signature dessert for Westport, has dished up the answer.
His creation, A Trilogy of Westport, was announced as winner of the Westport dessert competition in the final held in the Wyatt Hotel.
The competition was organised by Westport Tourism Organisation (WTO), and called on people with a passion for food to create a culinary delight to be branded 'The Westport Dessert'.
The event was open to anyone with a passion for food and it attracted an array of professional chefs as also lay participants, including some primary school children.
Passion is a word often overused with cooking, however passion it was on display on the night of the final.
Winner Danny, a chef at the Delphi Mountain Resort and Spa, said his dessert encompassed 'simplicity at its best - Croagh Patrick, Westport House and the Octagon in Westport'.
