Neven Maguire's Christmas at Kylemore Abbey

NEVEN Maguire's tradition of taking his much loved Christmas specials to different parts of the country - Kilkenny, Waterford, Cavan - continues this year as he showcases the very best of Kylemore Abbey and Connemara produce for the festive season.

Kylemore Abbey is renowned for its traditional home cooked food, and the traditional Benedictine welcome, making it the perfect location for this year's two-part special.

Part one of Neven's Christmas at Kylemore Abbey airs tonight (Tuesday, December 7) on RTÉ One at 8.30 p.m.

Said Nevin: “We chose Kylemore Abbey simply because it is so beautiful.

“We received such a warm welcome from everybody. I hope viewers will enjoy the many aspects of the Christmas specials, from head chef John O'Toole's demonstration on how to spice your beef, and different glazes for the family ham, to the sweet delights of the Chocolate Factory.

“And I was blown away by the Cantairi Chonamara choir's performance in the gothic church, and so pleased that they joined us.”

In programme one Neven prepares wild mushroom and chestnut soup, and grilled salmon salad with avocado and tomato salsa, grilled on a griddle pan.

He discusses different ham glazes with head chef John O'Toole, and enjoys some Benedictine truffles.

Programme two, on December 14, sees Neven prepares a smoked trout and crab starter with porridge bread, and Connemara lamb meatballs. He also cooks buttermilk brined turkey and cranberry sauce with port.

Neven's sweet treats include mulled winter berry Victoria sponge, and festive sticky gingerbread with butterscotch sauce.

Neven will also be chatting to abbey and gothic church manager Eithne O’Halloran about food at Kylemore before enjoying the Cantairi Chonamara Choir’s performance in the gothic church.
