Former Breaffy House manager launches book in aid of Mayo Roscommon Hospice
MICHAEL Cadden, father of Bar One proprietor Mark, has complied a collection of his favourite recipes to share, titled In Celebration of Food: A Collection Of Recipes to Enjoy Together.
It’s a collection of over 30 recipes which he compiled during the lockdown.
Michael, who is now retired from the hospitality business, owned The Asgard Tavern at the Quay in Westport with his wife Mary for over 20 years. The Asgard bar and restaurant won many awards for championing local produce, fresh seafood and everyone remembers its wonderful hospitality.
All proceeds from the book go to the Mayo Roscommon Hospice Foundation.
Michael trained in hotels in Ireland and London before returning as general manager of Breaffy House Hotel in Castlebar.
After purchasing the Asgard in 1978, Michael returned to head up the kitchen and Mary the front of house.
This book is a collection of recipes from those years and includes classics like Nettle Soup, Duck a L’Orange, Beef Stroganoff and Lobster Thermidor.
Michael said: “Throughout my hospitality career, cooking has been my love. I trained in many kitchens, and I thank the many mentors that awakened and nurtured my passion.
“From the Asgard on the quays to our home, these recipes are the ones that have been served over and over again.
“After much gentle harassment from my family, I put pen to paper and wrote down my favourites.
“I really hope you enjoy this collection of recipes and that they bring much joy to your families.”
The book is on sale for €15 at Bar One and Castle Book Shop, Castle Street and Main Street. The book is also on sale at Duffy’s Book Shop, Bridge Street, Market 57, Bridge Street, McLoughlin’s, Shop Street, and The Harbour Store, The Quay.
