New Mayo restaurant opening soon to have on-site organic bakery
The hospitality market in Mayo's county town is set to receive an imminent major boost with the opening in Castlebar of Kennedys, a multi-award winning hospitality group, at St. Martin's Terrace (opposite Lidl), Castlebar
The Connaught Telegraph can reveal that in addition to dining-in and takeaway facilities, the new Kennedys destination will also incorporate an organic bakery.
The on-site bakery will offer an extensive range of high quality and affordable breads and baked goods.
Keeping with the Kennedys ethos of whole foods, the bakery will only use organic flour.
Kennedys expects to open in the coming days.
Shane Bourke, director, told The Connaught Telegraph: “Kennedys is known for its quality coffee and food offering at reasonable prices underpinned by genuinely warm service. The introduction of an organic bakery to our Castlebar location offers, we hope, an additional reason to come and experience Kennedys.”
The development of the new commercial building within close proximity to the town centre has been characterised by the involvement of trades and services from around the locality.
Commenting on this, Shane Bourke noted: “I pay tribute to the professionalism and commitment of our design and build team – Taylor McCarney Architects, Seamus O’Brien & Sons Builders, Devaney Electrical, Jordan Plumbing, Fergus Doran (M&E Engineer) and Pat O’Grady (structural engineer)."
He also acknowledged the expertise and support of the fit-out team including CFC Refrigeration (Kitchen Equipment), Master Carpets (Flooring), APM (Security), Kevin Timlin (Tiling), C. T. Electric (Lighting), S & D Heney (Joinery), Pat & Jack Livingstone (Painters), Philip Durcan (Whiterock Specialist), Paraic Conway (Corian Specialist), Snap Mayo (Printing), Walter Donoghue (Bespoke Curtains), LG Glass (Mirrors) and Gilmartins (Catering Supplies).
Kennedys has received a “Best in Ireland” Bridgestone/McKenna’s Guides Award each year since opening in 2007.
The Castlebar opening will see the creation of up to 20 new jobs and a number of candidates who have been successful in the recruitment process have spent time with Kennedys in Dublin receiving induction training and mentoring from senior staff on Kennedys’ systems and culture.
