Ashford Castle’s star chef joins Pichet for five-star pop-up

PICHET, one of Dublin’s most celebrated dining destinations, has announced the next instalment in its acclaimed Friends of Pichet series - a one-night-only collaboration with executive head chef Liam Finnegan from world-renowned Ashford Castle Hotel in Mayo.

This exclusive event will take place on Sunday, February 22, at Pichet, offering guests a rare opportunity to experience an exceptional six-course tasting menu crafted by two of Ireland’s most talented chefs - Liam Finnegan and Pichet’s executive head chef, Harry Quinn.

The two will collaborate on a tasting menu that highlights the best of Ireland including locally sourced produce and seasonal ingredients, freshly picked from Ashford Castle’s organic kitchen garden.

With limited seats available, guests will enjoy a six-course tasting menu, complemented by expertly paired wines and the warm hospitality that has made Pichet a Dublin favourite for over a decade.

The February 22 event gets underway from 4 p.m. at Pichet, on Trinity Street, Dublin. Price: €105 for Food Only Menu or €150 for Wine Paired Menu Experience. To book, call Pichet on (01) 677 1060.

Since opening in 2009, Pichet has been a cornerstone of Dublin’s modern dining scene. Founded by acclaimed chef Stephen Gibson, the restaurant blends the relaxed charm of a French bistro with the sophistication of fine dining. At the heart of Pichet’s enduring success is its commitment to seasonal Irish ingredients, elevated through modern techniques and French flair.

Under the creative direction of Harry Quinn, Pichet continues to delight guests with refined yet approachable dishes that celebrate the richness of Ireland’s larder.

Leading the culinary direction at Ashford Castle since 2023, Liam Finnegan is known for his refined take on modern Irish cuisine, shaped by years spent in some of the UK and Ireland’s most distinguished kitchens. His dishes are renowned for their depth of flavour, precision, and respect for locally sourced produce - values that align with Pichet’s own philosophy.

Speaking ahead of the pop-up event, Finnegan said: “What excites me most about this collaboration is the shared respect we all have for Irish ingredients. It’s about letting great produce speak for itself, and when chefs with the same passion come together, something special happens.

“I can’t wait to bring a taste of the west and Ashford Castle to Dublin and create an evening that’s all about craft, connection, and flavour.”

The Friends of Pichet series has become a highlight of Ireland’s culinary calendar, celebrating creativity and a shared passion for exceptional food.
